Actually, they are six desserts that should be on this list but last week’s recipe for cherry cheesecake semifreddo happened like I just mentioned last week, so I guess you won’t need a reminder for that (although I just did it somehow anyways). I have this recipe for strawberry lime tart on top of my dessert list for good reasons! This is a refreshing summer dessert, strawberries make this tart a little bit sweet, and the lime juice and lime zest add a little bit tartness.
This is a simple recipe that everyone can make, the dough is quickly mixed and topped with fresh sweet and tart apricots. I love that this cake is so moist and tender and that makes it perfect as a summer night dessert or as a treat in the afternoon. The apricot season is short and you can easily substitute with peaches or plums.
Flipper! Is this not a weird name for an ice cream float? Growing up I spent a tiny fortune (not really) on this treat hanging out with friends in this Italian ice cream shop in my old hometown, however, it’s so easy to make at home! I think the best about this is the melting vanilla ice cream, that cools and blends into the fresh-pressed orange juice and a cloud of soft ice cream is floating on the top of the glass.
Last but not least on my list of 5 sweet summer recipes is the blueberry torte. You don’t have to be a pastry chef to make it because it’s an easy sponge cake. I cooked down the blueberries a bit to soften them up and to get a blueberry sauce. I used half of the sauce for the filling and mixed the other half with cream cheese for the frosting.
