This salad is an easy made, after work and healthy meal not just for hot days. I like how versatile it is and I tried some other varieties just with what I found in my fridge.Try it with other green stuff like arugula or add an poached or hard cooked egg.
The chicken breast was an already cooked leftover. You can also take an uncooked, in this case preheat the pan with the olive oil, cube and fry the chicken with the garlic, season and add the mushrooms for the last few minutes. The champignons keep their flavor and won‘t brown to much. Or try it with bacon or ham. For a vegetarian version you can also use tofu (just a suggestion, I haven‘t tried that).
spinach salad with brown mushrooms
makes 2 servings
about two handful of fresh baby spinach per plate
15 small brown mushrooms
1 garlic glove
1 cooked chicken breast (optional)
green olives pitted
salt, fresh ground pepper, herbes de Provence
for the dressing:
3 tbsp balsamic vinegar
1 tbsp olive oil
1 tbsp honey
1 tbsp Dijon mustard
Wash the spinach in a colander and let dry well.
You can clean the mushrooms by washing under water or brushing off the dirt and clean by wiping with a paper towel, cut off the dried part at the end. Slice the mushrooms and the chicken, chop the garlic glove and the tomatoes.
Saute the mushrooms in a medium size pan with about 2 teaspoon olive oil and add the garlic and the chicken. Stir well, this takes about 3 minutes. Season with sea salt, fresh ground black pepper and herbes de Provence.
Arrange first the spinach on a plate, add the tomatoes, olives and the hot mushrooms with chicken mix.
Top with feta, cut into cubes or crumble them. Sprinkle with balsamic vinegar or make a dressing from the above mentioned ingredients. If your honey is crystallized you can head it up in the microwave for a few seconds. Stir together the olive oil, balsamic vinegar, honey and Dijon mustard by using a wire whisk or hand blender.
This salad is also a nice side dish.You can add sweet corn, red peppers or a red shallot (saute with the mushrooms or leave them raw).
